Brinjal coconut Fry

      Ingredients for Brinjal coconut fry:

                                                  

Green Brinjals , Grated coconut, Curry leaf's , Dry Red Chilies.



Jaggery, Tamarind extract, Onions chopped length wise.



Step 1: Wash and chop green brinjals length wise and put it in water and mix some salt to it.

Step 2: Heat oil in a pan for seasoning add tsp of mustard seeds,red chilies, curry leaves, chopped onions, and saute for two mins.

Step 3: Add the brinjals and saute till it is cooked

Step 4: once the brinjal gets cooked add 2 tsp of tamarind extract and 1 tsp of jaggrey to balance the sourness tamarind. At this stage if you prefer spicy then can add a tsp of red chill powder. i would prefer to add a vangi bath powder.

Step 5: off your stove and Add grated coconut once the ingredients are cooked. the twister is the tamarind and jaggery which will leave your taste buds asking for more.
