How to prepare simple Veg fried rice

 
This is a very simple home made version of fried rice without too much oil and even without sauses. I like it the way as it is named - veg fried rice, so my rice is loaded with veggies. If you have the steam cooked rice & chopped veggies ready, then this recipe should be ready under 10 minutes. Now let's hop to start making note of this healthy version of home made vegetable fried rice. 
 
Ingredients
Whole lot of lengthwise chopped fresh veggies,. The ones I used are as below, you can choose to add / replace any sand go by your choice.
2 onions 
1/2 cabbage
1 capsicum  
1 cup paneer 
1 carrot 
3 tsp Ginger garlic paste / pounded
2 slit green chillies 
3 tsp cooking oil 
1/2 tsp pepper powder 
Salt as per taste 
2 cups cooked rice 



 
 
 
Method
Start by heating oil in a large pan, once hot sauté ginger garlic, green chillies and onions first for few seconds 
 
Thrown in all chopped veggies and give it a good stir for about 10 minutes until the veggies are 3/4 th cooked. Veggies should remain crisp not soggy and over cooked
 
Once done add rice, salt, pepper powder and give it a good stir for about a minute or so. Stir fry the rice with vegetables on a high flame, keep sautéing to get that fried taste. Keep close eye on this, else shall get a burnt fried rice ;). 
 
Once done serve it with sause. Very simple rice variety loaded with veggies ready in a jiffy.

Ghee rice with carrots, peas and coconut milk

This is a must try recipe. The aroma of zeera rice cooking in ghee with sweet carrots and peas will test your patience until done to grab a bite. 

Thanks to my sister for asking us to celebrate her birthday this year at home with home cooked meals instead of our regular practise to dine out and cut a cake. Isn't it so mundane? So for our homely treat we started with ghee rice along with mushroom-panner gravy and finished with shahi Tukda for dessert. Thanks to my Amma (mom) and brother in laws for their help in chopping  veggies and  being a caretaker of the day for my lil son. Since me and sis had a task of putting together a meal for 8 of us:).

Ingredients:   
1 kg jeera rice ( must for this recipe. You can get this in all supermarkets)


  Ghee : 7-8 tsp 


 1 cup each of green peas and finely chopped carrots


7-8 cups of thick coconut milk


Bay leaves 2, 1 tsp of sounf, 2-3 cinnamon sticks and 1/2 lemon


4-5 slit green chillies



Method: 
Firstly, smear the pressure cooker with ghee reaching to all sides so that the rice soaks in ghee flavour. 
Heat ghee, add all dry spices with green chillies and sauté for a minute 


 


Add carrots, peas and sauté well

 

In goes thoroughly washed rice which needs to be sautéed for about 5 mins in low flame


Mix the rice well to see this blissful colour combination



After sautéing the rice, add 8 cups of thick coconut milk and 4 cups of plain water. Note : my cup measures 6 cups of rice for 1 kg. so I need 12 cups of water to cook the same. Rice cooks in 1:2 ratio. Adjust water level accordingly.fool proof method to do rice is to use the same cup for measuring rice and water you will never go wrong:)


Time to add salt according to your taste. I have used 3 tsp if rock salt here. Squeeze juice of half lime and let it boil. Once it starts to boil, close the lid and cook for only one whistle else rice will become mushy



Allow the cooker to cool and steam to escape before you open it. Then explodes the tempting 
your kitchen.

Aromatic ghee rice is ready to serve.

Capsicum rice recipe

Ingredients for Capsicum rice:

washed and medium sized chopped capsicum, MTR vangi bath masala powder,2-3 chopped onions,2 chopped tomatoes and handful of coriander.





For seasonings :cooking oil, tsp of mustard seeds,urad dal and Bengal gram, curry leaves and dry chilies.



1 big cup full of cooked rice, grain should be separate not mushy. 



 Step 1 : Heat oil in a pan, add mustard seeds to crackle add urad dal and channa dal, curry leaves and red chilies.



 Step 2 : Add onions and saute well for 1 minute.



Step 3 : In goes chopped tomatoes, saute till it leaves its juice out.


 Step 4 : Time to add capsicum

 Step 5 : Fry capsicum well without adding water.



 Step 6 : Add salt as per taste.



 Step 7 : Add MTR vangi bath powder about 4 tsp.



 Step 8 : Switch off the stove. capsicum needs to be crunchy for this recipe.
Add coriander leaves.

 Step 9 : Add cooked rice.



 Step 10 : Mix well so that rice takes all the flavor from the capsicum masala.



Serve hot with raitha of thick curds, chopped onions, cucumber and coriander.

Lemon Rice

Ingredients for Lemon Rice: 

                                                 
                    1 cup of grated cocunut, 1/2 cup ground nuts, 4-5 green chilllies, 1 medium lemon, curry and coriander leaves.1 big bowl of cooked rice. Rice needs to be Grainy as mushy rice will spoil the taste. 



Step 1: Dry roast peanuts in a frying pan until the skin has black tints.

Step 2 : Heat oil in a pan, add, mustard seeds let it crackle, urad and bengal gram, green chillies and curry leaves.


Step 3: Add roasted ground nuts and saute for a minute.




 Step 4 : Add grated coconut and off the stove.




 Step 5: Time to add lemon juice according to taste preference.




 Step 6: Add salt and mixture is ready.




Step 7: Add hot rice and mix well Adjust salt if reqired.





Lemon Rice ready to serve. Tastes beat when served hot.

Coconut Rice

Ingredients for coconut rice:

                                                     
                                1 big cup of hot cooked rice, 1 cup of fresh grated coconut , oil 2 tsp, mustard seeds, ural and bengal gram.


Step 1: Heat oil in a pan and add mustard seeds to crackle.



Step 2: Add urad dal and bengal gram and fry for 2 sec.


Step 3: Add curry leaves and dry red chilies




Step 4: Add grated coconut and for a minute and off the stove


Step 5: Add hot rice and mix well




Hot coconut rice ready!!!
