Ingredients for Averekalu / Indian Bean Usli / Fry:
Pealed and washed Averekalu / Indian Bean 1 cup, Finely chooped onions, curry leaves, grated cocunut, dry red chillies and coriander leaves.
Step1: Pressure cook the Averekalu with a bit of salt.
Step 2 :In a pan add oil, once hot add mustard seeds and allow it to crackle then add curry leaves and red chillies.
Step 3 :Add chopped onions and saute for about a minute.
Step 4: Time to add cooked Averekalu
Step 5: Toss around for a minute for all the ingredients to mix
Garnish with coriander leaves and a with a pinch of lime juice (optional).
