Veggies Mayo & Mustard Sandwich

 
When it comes to Sandwich, i try to do lot of experiments with the fillings. One such result is this recipe "Veggies mayo & mustard sandwich". I love doing them up since it is so damn easy, filling and tasty too. 
One fine day when i wanted to have a filling snack I opted for this sandwich which has a robust filling of simple / basic Vegetables. You can choose to select the veggies you want to put in the filling other than the ones give here. I so wish I had a stock of wheat / multigrain bread but was not handy:( [it would have been a perfect healthy recipe then].Nevertheless let's begin our recipe of the day. 
Ingredients: 
Bread ( of your choice) - 4 slices  
Veggies - 1 big bowl (chopped into chunks) here I have cucumbers, tomatoes & onions
Mayonnaise - 5-6 tsp 
Mustard paste / sauce - 4 tsp 
Salt & pepper powder - as per taste 
Butter- 2-3 tsp 

 
Method:  
Start by adding salt, mayonnaise, salt & pepper to the veggies in a big bowl. Give it a good mix. Now your creamy filling is ready to go in.

Start by smearing some butter and mustard sause on your bread  
 
Put you filling in between and sandwich it with another slice of bread on it 



Toast it on a toaster
Bang on... It is our sandwich is reAdy in a jiffy.






Brinjal & Potaoes curry with poppy seeds

I 
This is Andhra speciality which I tasted in one of the restaurants. Very uniquely blended gravy which is creamy and aromatic due to the blending of poppy seeds, sweet, spicy & tangy too.Goes divinely well with hot steamed rice topped with ghee. Also can be had with roti/ chapatis. 
 
Ingredients:  
Brinjals -4 
Potatoes - 1  
Ginger Garlic - 5-6 & 1 inch crushed 
onion - 1finely chopped 
Tamarind pulp - 5 tsp 
Jaggery - 1/2 tsp crushed   
4-6 tsp cooking oil  
Turmeric, zeera,methi powder-1 tsp each 
Red chilli powder - 2 tsp 
Poppy seeds - 100gms


 
Method
Start first by slightly warming poppy seeds, just a little warm will do and allow it to cool.

Shallow fry chopped brinjal and potatoes till they are 3/4 th cooked in oil

  
Keep it aside

Fry crushed ginger garlic and onions in 4 tsp oil till onions turn pink

Add in turmeric, jeera, methi, chilli powder and give it a good sauté 
Pour in the tamarind pulp with 2 tsp water and cook for few seconds 
Then pour in a cup of water and allow it to boil this forms the base for the gravy

Add in the cooked potatoes and Brinjals 

Add the crushed jaggery and Allow it to boil
 
Meanwhile grind the poppy seeds with a little water or milk to a thick paste
 
 
Pour in the paste to the boiling gravy
Add salt as per taste
 
The color changes after adding in poppy paste and make the gravy thick and creamy 
Allow it to boil for 5 mins on slow fire
And the aromatic, sweet, spicy and tangy gravy is ready to serve




How to prepare Apple Crumble with Muesli

What is a Sunday without making something  special for friends and family?. Yeah so one such Sunday I made this delicious apple crumble which was relished by my son the most. He loves all things crispy, so this was crunchy enough for him to bite. Had a hard time putting his hands off to photograph this pictures. 
Well, this particular blog marks very special for me, not just for the perfect turn out of the crumble but it also marks my switch from phone to DSLR clicks:) awww so delighted. So from now you will more quality pics. 
Now, I would not like to miss to describe how my crumble tasted - juicy apple at the bottom, perfectly browned at the sides and crunchy at the top loaded with muesli and nuts. Isn't it tempting, just try this an dig in.
 
 
Ingredients: 
3 apples 
1 cup - maida / all purpose flour 
1/2 cup - butter 
1/4 - cup caster sugar / powdered sugar 
Salt - a pinch 
1 tsp - vanilla essence( optional) 
1 cup - muesli with nuts of your choice  


Method:
Wash, Peel and chop the apples into small chunks
Add butter and sugar to the flour
Give it a good mix with your fingers to form such crumbles. 
Butter your tray
Place the apples first and coat it with castersugar and vanilla essence 
Add in the crumble and muesli, 
Sprinkle caster sugar again and Top it with muesli and nuts for that extra crunch 
Bake the crumble approximately for 40 minutes or until the crumble is crispy and golden brown in color.
Allow it to slightly cool and allow yourself for a sinful treat😍
Juicy apples stay right at the bottom absorbing all the sugar and you get the golden roasted crunch of the crumble, muesli and nuts to savour.
